“With a concept as ambitious as Giancarlo’s Cafe & Spirits, you might think it’s the latest from a large restaurant group. But it’s a family-owned operation — and that’s evident throughout. During a brief 20-minute phone conversation on opening week, owner Travis Kaiser could be heard dropping off bar supplies and helping guests with a door.
Giancarlo’s is a new restaurant, bar and coffee shop from Kaiser and his team. It opened Monday in North Hyde Park, a few blocks away from Santoro’s Pizzeria, Kaiser’s New Jersey-style slice shop. Giancarlo’s and Santoro’s are a family affair: The former is named after Kaiser and his wife’s youngest son; the latter after their eldest.”
